Introduction

When my husband is out of town on business, I try to come up with extremely simple things to make myself for dinner. This is one of them.

These taste really good with some cheese in them as well, but it does add extra fat.

Number of Servings: 10

Ingredients

    2 cups cooked rice
    1 - 8 oz can tomato sauce
    1 can black beans, drained
    1 can corn, drained
    Whole Wheat Tortillas

Directions

Cook rice according to package directions.

Put rice in a medium sauce pan. Add tomato sauce, beans and corn and simmer until rice absorbs tomato sauce.

Place in whole wheat tortilla, and wrap.

Makes 10 servings. 1/2 cup filling per tortilla.

    This sounds really good! I'm planning it on the menu in a few weeks, and i'll report back!
    The bf was out of town for business eariler this week and i made a bean burrito with onions and hot sauce. Adding black beans/corn sounds perfect!
