egg white, fresh, 4 large
Lemon juice, 1 tbsp
Vanilla Extract, 1 tsp
Powdered Sugar, 0.75 cup (divided)
Cake Flour, 0.33 cup
Salt, 1 dash
Directions
Preheat oven to 350 degrees F.
Separate the egg whites.
Sift half of the powdered sugar with the salt and the cake flour, setting the remaining sugar aside.
In a large bowl mix egg whites, vanilla and lemon juice with a hand mixer. Slowly sift the reserved sugar, beating continuously at high speed. Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.
Carefully spoon mixture into an ungreased pan. Bake for 25-30 minutes. Insert a wooden skewer to check if the cake is done, the skewer should come out clean.
Cool the cake upside down on cooling rack for at least an hour before removing from pan.
