    1 Tbsp pure vegetable oil

    4 boneless, skinless chicken breasts cut into
    1 inch chunks (about 12 oz.)

    1 cup uncooked long grain rice

    1 (10oz) can Rotel diced tomatoes with green chilies

    1 (80z) can tomato sauce

    1 cup water

    1 cup shredded cheddar cheese

    2 green onions thinly sliced (optional)

    sour cream optional

This is a recipe from ConAgra foods (Rotel). I got it our of a magazine.

Heat oil in a large skillet over medium heat. Add chicken and cook for 5 minutes, stirring frequently, until chicken is no longer pink.

Stir in rice, tomatoes, sauce, and water. Bring to a boil. Cover and reduce heat to low. Cook about 20 minutes until rice is tender.

Stir chicken and rice. Top with cheese and green onion. Cover and cook 5 minutes more or until cheese melts.

Serves 4 (1-3 oz chicken breast, 1/4 c. rice with cheese and sauce each)

    This was so yummy!! My roommate and I both loved it. She doesn't eat spicy food so I used regular Rotel but when I make it just for me I'll definitely use spicy Rotel because it could use a kick. I loved the carb count and I served it with a salad. Will definitely be making it again! - 4/30/12

    I made this tonight for dinner with a few changes. I added some southwest seasoning and cilantro lime season as well. this gave it a little more flavor. - 12/12/10
