Introduction

A delicious way to use up leftover brown rice for a sweet treat. Portion size is 1/2 cup. A delicious way to use up leftover brown rice for a sweet treat. Portion size is 1/2 cup.

Ingredients

    1 can coconut milk (can use light)
    3 cups prepared brown rice
    1/2 c. sugar (use more or less to taste)
    1 tbsp cinnamon
    pinch of salt

Directions

Prepare rice as directed or use leftover rice. Place in medium pot with coconut milk, sugar, cinnamon and salt. Cook over medium low heat, stirring frequently until the rice absorbs nearly all of the coconut milk. This can be served warm or cold. I like to put 1/2 cup portions into small ramekins, cover with plastic wrap and refrigerate for a nice little after dinner treat.

Nice additions either before or after cooking:
raisins
craisins
almond slices
pastachios
flaked coconut (esp. browned and sprinkled on top)

    It was a little too rich, and next time I will use less coconut milk. You can add all ingredients to the rice cooker when you are cooking rice for a very easy dessert. - 10/21/09
