Number of Servings: 4

Ingredients

    1 lb baby red potates, halved
    1.5 tsp. olive oil
    1/4 tsp black pepper
    1/8 tsp salt
    1/2 cup coarsely chopped walnuts
    2 oz blue cheese, crumbled
    2 scallions thinly sliced

Directions

Preheat oven to 425 degrees. Coat a 9x9 baking dish with cooking spray or line with parchment paper. Place potatoes in dish and toss with pepper, salt and oil. Turn cut side down in pan. Roast 30-35 minutes or until very tender and golden brown on the underside.

Meanwhile put the walnuts in a small baking pan and place in oven for 6-8 minutes. Put into bowl to cool. Add the blue cheese and scallions.

When potatoes are done, turn them over and sprinkle evenly with the walnut mixture. Bake for 5 minutes longer or until cheese is melted.
