Ingredients

    1 Med. Red Onion
    1 Orange Bell Pepper
    1 Yellow Bell Pepper
    1 Green Bell Pepper
    1 med Jalapeno
    1 cup sliced, fresh mushrooms
    .5 cup canned green chili peppers
    8 Tbsp. Lindsay canned sliced ripe black olives

    8oz Mozzarella Cheese, part skim milk
    2 large eggs
    1 cup flour
    2 cups Hunt's tomato sauce - no salt added

Directions

Preheat oven to 350
Cut vegef abd toss into 13x9x2 pan
sprinkle with Mozzarella cheese

In a bowl, mix eggs, milk, and flour - pour over veges
Bake for abotu 20-25 minutes until the flour mixture is hardened.
