Introduction

I got this recipe from a girlfriend of mine when I was pregnant, and I absolutely loved it then, and still think it is fabulous!!! I got this recipe from a girlfriend of mine when I was pregnant, and I absolutely loved it then, and still think it is fabulous!!!

Ingredients

    1 lb. lean ground beef
    1 15oz.. can diced tomatoes
    2 cups instant brown rice cooked
    1 cup spinach finely shredded
    salt, pepper, and garlic to taste

Directions

Soo...you brown the ground beef. ( I am sure you could use turkey too just haven't done it yet.) Meanwhile cook instant brown rice according to package directions. Drain grease from meat. Add tomatoes, spinach, cooked rice and seasoning, and you're done.
You can use fresh or frozen spinach. I have only used fresh, and I just break it up into tiny pieces with my hands, so it's easy. This may not be the healthiest thng you could eat, but it is so warm and good!! MMMM...I think it makes around 5 1-cup servings

    Incredible!
    This is super tasty, and quite easy to make. I didn't use the whole can of tomatoes, and strained the juice out. 1 cup for a serving is actually quite a substantial amount, even though it doesn't sound like it. It even filled my always-ravenous boyfriend! - 2/23/11
