Ingredients

    1 1/2 Cups unbleached flour
    1 1/2 Whole wheat flour
    1 cup of Oat Bran
    1 T spoon Bakeing soda
    1 t valilla
    4 eggs
    8 ripe banana's (small)

Directions

Mix ripe banana's, vanilla,eggs, mix well.
Mix flour, oat bran, baking power add to dry ingredients. Dont over mix muffins. Pour into 2 Texas muffin pans.
Bake 350 fro 40 minutes or until done.

    Good
    I halved the recipe and used rolled oats and added 1/2 c chopped pecans. I baked them in a regular tin for 18 mn at 350, made 12. They're good but I would add 1/4 brown sugar next time. I'd like it a bit more sweet. - 5/26/12
