Ingredients

    4 Boneless, skinless Chicken Breast
    1 Large Tomato cut into wedges
    1 Cup Sliced Red Onion
    1 Green Bell Pepper Cut into Strips
    1 Red Sweet Pepper Cut into Strips
    1/2 Bunch Cilantro Chopped Leaves only
    5 Tbsp EV Olive Oil
    2 tsp Red Wine Vinegar
    1 tsp Chili Powder

Directions

Grill Chicken on Foreman Grill until cooked through, cut into strips
In a Bowl
Add All Other ingredients and Chicken Mix well. Refridgerate until chilled. Serve over a bed of Greens, Wrapped in a WW LC Tortilla, or use as the meat on a plate of Nachos.
