Ingredients

2 Tbs Olive oil , divided
6 cloves garlic minced
1 T chili powder (more or less to taste)
1/8 t black pepper
3/4 t salt divided
1 lb boneless,skinless chicken
1 - 15ox can no salt added black beans, drained and rinsed
1 haas avocado peeled and cut into chunks
1 cup cherry tomatoes
1/2 cup cilantro leaves chopped
1 T Line Juice (more or less to taste)
2 Bell peppers (any color) sliced into 1/2 inch strips
1 medium onion cut into 1/2 inch strips
Directions
Mix 1 Tbs of the oil with the garlic, chili powder, black pepper, and 1/2 t salt in a medium bowl, Add chicken and toss to evenly coat, set aside.
In separate bowl make black bean salsa by gently tossing together beans, avocado, tomatoes and cilantro. Season with lime juice and 1/4 t salt - taste add more lime juice if desired
In large non stick skillet over medium - high heat saute peppers and onion in 1 T olive oil - Don't stir until they begin to char about 3-5 minutes. Stir and continue to cook until they begin to soften about 2-3 minutes - remove from skillet
In same skillet add the chicken and saute till fully cooked about 3-5 minutes - return peppers and onions - serve with black bean salsa - Serves 4
