Introduction

Ingredients

    4 Large chicken breasts
    1/4 cup Progresso Bread Crumbs, Italian
    6 oz. of Velveeta block cheese made with 2% milk
    Approximately 50 Jalapenos (less if you want it less spicy)

Directions

Preheat oven to 400 degrees

Spray 9x13 pan with butter flavored spray and set aside.

Slice all 4 chicken breasts with fillet knife to make 8 thin pieces. You need to do this so you can roll the chicken later.

Cut off 6 oz. of the Velveeta block cheese. It is marked in 4 oz. sections so it should be easy.
Cut this block into a total of 24 strips of cheese.

Lay the chicken fillet side up.

Place 3 strips of cheese with a little space between them from the wide end of the chicken to the middle.

Place about 6 jalapeno pepper slices on the cheese slices.

Roll the chicken starting at the wide end to the skinny end doing your best to keep everything inside.

While holding the rolled chicken sprinkle on the bread crumbs over the whole chicken roll (all sides).

Place the rolled and breaded chicken in the sprayed 9x13 pan.
Repeat for the remaining 7 pieces.

Place in oven that is set to 400 degrees for 30 minutes.

Remove and let set for about 3 minutes before serving.

It is also good served with your choice of salsa on the side.
