Introduction
These veggie fritters can be made vegan by omitting the egg substitute (which is used as a binder), and adjusting the liquid-to-breadcrumb ratio so that they don't fall apart. Ingredients

1 bag Frozen Cauliflower, defrosted, liquid squeezed out
0.50 box Frozen Sweet Corn, defrosted
.025 cup egg substitute
0.25 cup bread crumbs
Salt to taste
Pepper to taste
Hot Pepper flakes, to taste
Directions
Put defrosted cauliflower in a microwave-save bowl and heat until tender, but do not overcook. I found that I could go from frozen to tender in about 5 minutes. If the cauliflower is very hot, cool it by either rinsing with cold water, or by submerging the bowl into a container of ice water for a few minutes. This is important, as you will be forming the fritters with your hands.
Add the remaining ingredients, mixing well.
Form fritters by putting about a baseball-sized amount into your hand, and then shaping into a pancake. You want the fritters to be about a quarter-inch thick, otherwise they won't cook properly.
Spray a skillet with a non-stick spray, place over medium heat for about two minutes to pre-heat. Cover, cook fritters for 3-5 minutes on each side, or until brown.
Makes four 3-fritter servings
Serve with Sweet Citrus Sauce:
0.25 FF Vegenaise
1 tbsp Honey (or Agave nectar, for vegan)
3 tbsp. Lemon juice
Cayenne Pepper, if desired
