Ingredients

    cauliflower-fresh or frozen 2 cups
    dill or carraway seeds- 1/2 tspn or to taste
    light margarine without trans fats- for example, benecol- 1 Tablespoon

Directions

put cauliflower in steamer.
sprinkle seeds on cauliflower.
cook frozen cauliflower a little longer than package directions. cook fresh cauliflower till soft (this will take longer).
mash with margarine.
makes 1 2-cup serving.

    Very yummy! I definitely felt like I was eating mashed pots (my fav). Don't add milk like you would with mashed pots- its already a moist consistency after mashing. - 5/14/07

    I actually make mine with a bit of soy milk into it instead of butter. You can also mix in a bit of dry mashed potato mix to give it more of a mashed potato feel in your mouth. An excellent way to get a meat & potatoes kid to eat some veggies!! Mine LOVED these. - 3/15/07

    I love cauliflower and I love mashed potatoes so this was great! I added garlic and a very little amount of salt and pepper because I didn't have any dill. I only used a tsp of margerine, and it seemed to work well!

    These are yummy and so easy to make. Anytime I get a craving for mashed potatoes, I make these, adding a little minced garlic when cooking. If you whip them enough, nobody even knows that they aren't real mashed potatoes! - 3/15/07
