This easy cassarole takes all the flavors in beef enchildadas and puts a healthier spin on it. Serve with mexican rice and black beans for a great meal! Ingredients

    1 lb. Ground turkey
    8 corn tortillas
    1 can Ranch style beans
    1 cups cheddar cheese
    1 can Campbell's cream of mushroom soup

Directions

brown turkey first. Line 9x12 cake pan with corn tortillas after spraying with olive oil cooking spray. Spread beans on top of tortillas. Layer turkey, cream of mushroom soup and cheese. Bake at 350 for 35 minutes.
