Ingredients

1 1/2 c. all purpose flour
1 cup unprocessed wheat bran
4 pkts. sweetener (stevia)
1 Tbls. baking powder
3/4 tsp. ground cinnamon
1/2 tsp. salt
1 cup unsweetened applesauce
1/2 cup unsweetened soy milk
2 Tbls. Olive Oil
1 egg, beaten
Directions
Makes 12 med. muffins.
Heat oven to 400 F. Line 12 medium cups with paper baking cups and spray bottoms only with cooking spray In large bowl combine flour, bran, sweetener, baking powder, cinnamon and salt; mix well. Add all at once to dry ingredients applesauce,milk, oil and egg. Stir just until moistened. Do not overmix. Fill muffin cups about 2/3 full. Bake 18 to 20 mins. or until golden brown and wooden pick inserted in center comes out with a few moist crumbs clinging to it. Cool muffins in pan 5 mins. You can store up to 6 months in the freezer in a sealed bag. To reheat, wrap in a napkin and microwave on high about 30 seconds.
