Ingredients

    2 cups whole wheat flour
    1/4 cup pinhead oatmeal (steel-cut or Irish oats)
    1/4 cup wheat germ
    1/4 cup bran (wheat bran)
    2 tbls oatmeal (quick or rolled oats)
    2-3 tsp dark brown sugar
    1-2 tsp salt
    2 tsp baking soda
    2 tsp cream of tartar
    1 egg
    buttermilk or milk (up to 2 cups)

Directions

Mix all together, it will be quite wet. Spoon/pour mixture into loaf pan. Sprinkle top with sunflower or sesame seeds. Bake at 350 for 50 minutes.

Loaf can be sliced into 10-12 slices. Serving size is calculated at 1 slice of 12 per loaf.

    Phenomenal - exactly what I wanted, great light texture, fantastic flavor, and soooooo easy! No improvements to suggest, although I used Soy Milk and regular oats instead of steel-cut due to ingredients on hand. Paired it with Butternut Squash soup - yum! - 3/5/09

    So delicious straight from the oven - YUM! It is definitely dense, but I love dense breads. The crust on it is super thick, so it can be a little hard to cut without a good bread knife. - 6/1/10

    Quite good, but a bit different flavor that takes some getting used to. Also, it was a little denser and more crumbly than I had hoped. All in all, a good recipe, though. Thanks for sharing! - 4/9/10
