Introduction

Ingredients

    3 tbsp. vegetable oil
    1 cup chopped onion
    2 tsp. minced garlic
    1 tsp. red chile flakes
    1/2 cup chopped basil leaves
    2 tbsp. soy sauce (I used low sodium)
    1 tbsp. fresh lime juice
    12 oz. peeled and deveined medium shrimp
    2 cups cubed fresh or frozen mango
    1/4 cup shredded coconut

Directions

Heat oil in large frying pan over medium heat. Saute onion until golden brown. Add garlic, red chile flakes, fresh basil, soy sauce, lime juice and shrimp. Cook, stirring often, until shrimp turn pink. Add mango and cook until warm. Sprinkle with coconut and serve with rice (recipe says preferrably jasmine - rice not included in calorie calculation). You could use pineapple or orange instead of mango too.
