Introduction

Number of Servings: 6

Ingredients

    2 1/2 lbs fresh asparagus (about 30 large)
    1 T olive oil
    1/2 tsp. sea salt
    1/4 tsp. pepper
    1/2 cup freshly grated Parmesan cheese

Directions

1. Preheat the oven to 400 degrees.
2. Prep the asparagus by holding each end in one hand and gently bending it to snap it at it's natural breaking point-this is the point at which the asparagus is most tender. The bottoms are fiberous; throw those away.
3. Lay the asparagus in a single layer on a cookie sheet and drizzle with the olive oil. Season with the salt and pepper. Roast in the preheated oven for 15 to 20 minutes, until tender. Sprinkle with the Parmesan and return to the oven for another minute. Enjoy!
