    Chicken, Broccoli, Cauliflower, Peas, Onions, Sweet Potatoes, Olive Oil, Coconut Milk (lite), Curry Spice Mix.


Cook all vegetables in big pot with two or three cups of water, start with sweet potatoes and cauliflower, then add rest since they take less time to cook. Cook chicken in separate pan with olive oil. Shred after cooking and add to vegetables. Add in the curry mix, more for spicier, less for more mild, available at Indian grocery stores. Last add coconut milk. Stir, simmer for ten mins. Makes 5, 1 cup servings.
