The cakes can be made to include sweet, savory, or sweet and savory with or without spice. Can be prepared in less than 15 minutes and great to refridgerate. Ingredients

    Parmesan Cheese, grated, 1 tbsp
    *Brown Rice, long grain, 2 cup
    Egg, fresh, 2 large
    Bread crumbs, dry, grated, plain, .25 cup
    Fresh Chives, 2 tbsp chopped
    Salt, 1 dash
    Pepper, black, 1 dash
    Hot Pepper Sauce, To Taste
    Garlic powder, 1 Dash
    *Whole Wheat Flour, For Dusting

Directions

Mix the rice, eggs, scallions, cheese, hot pepper sauce, garlic powder, and salt and pepper together. Test seasoning by cooking a tablespoons-worth; adjust seasonings. Mold the correctly seasoned cakes into round or oval cakes. Lightly dust in flour and saute in vegetable olive oil until golden brown on both sides (using olive oil will contribute to "good" cholesterol).

    Incredible!
    Made these to use up some leftover rice. They were very good! I did add a dash of old bay spice as I was serving them as a side to fish. They turned out wonderful. - 2/9/11
