Introduction

Ingredients

    1 pound skirt steak
    2 tbsp olive oil
    1/4 cup lime juice
    1 tsp cumin
    1 tsp coriander
    8 cups mixed spring greens
    1 medium cucumber, peeled and sliced
    8 tbsp Newman's Own Light Lime Vinaigrette
    4 tbsp shredded Parmesan cheese
    kosher salt

Directions

Marinate steak for about 10 minutes in olive oil and lime juice, cumin and coriander mixture. On either a grill or an indoor grill pan, cook the steak, adding some kosher salt to each side.

Meanwhile prepare lettuces and cucumber and toss with Newman's Own Light Lime Vinaigrette dressing. Place about 1/4 on each of 4 plates.

Divide cooked meat into four portions, cutting meat in to bite sized pieces, across the grain. Put meat onto salad. Finish with a sprinkling of 1 tbsp of Parmesan on each salad plate.
