Introduction

This was a recipe I found on allrecipes.com and tweaked it a bit to make it healthier. I posted a double batch because I cook for a lot of kids, so you can cut everything in half for fewer pancakes. Ingredients

    1 c. all purpose flour
    1 c. whole wheat flour
    1/4 c. baking powder
    2 tsp. salt
    1/4 c. sugar
    2 large eggs, beaten
    2 Tbs. vegetable or canola oil
    2 c. skim milk
    1 banana, mashed

Directions

Preheat skillet over medium heat, or prepare electric griddle to 350F. Combine dry ingredients in a bowl and add wet ingredients. Mix until it is a smooth batter, and drop onto hot skillet or griddle to form pancakes. Flip cakes when batter starts forming holes in the top, then cook another minute or two. Serve with reduced sugar pancake syrup. Makes 26 pancakes.
