Introduction

A good weekend dish for sitting around watching football that while not fat free is still much better than most nachos and cheese dishes. A good weekend dish for sitting around watching football that while not fat free is still much better than most nachos and cheese dishes.

Ingredients

    1 Large Chicken Breast (Boneless and Skinless)

    Crushed Red Pepper
    Spicy Steak Seasoning
    Course Ground Black Pepper
    Cajun Seasoning

    About 7 ounces of Tostitos Restaurant Style Tortilla Chips (or what ever you prefer)

    4 ounces of Velveeta cheese made with 2% milk

    About 34 slices of sliced Jalapenos (amount optional)

    1/4 cup of chunky salsa (I prefer medium spice)

Directions

Place chicken on a grill (I use a George Foreman)
Sprinkle crushed red pepper, spicy steak seasoning, cajun seasoning and course ground black pepper on chicken to your desired level.
After about 2 to 3 minutes flip the chicken and season the other side.
Grill until chicken is cooked all of the way through.
Cut chicken into cubes
Put the Velveeta and Salsa in a microwavable bowl
Microwave for about 5 minutes but stir it after the first 3 of those (may vary depending on microwave so watch it closely)
Stir when complete
Place chips on platter
Pour cheese and salsa mix over chips
Spread chicken chunks and jalapenos over the top
Serve immediately
