Ingredients

    4 chicken breasts, skinless, boneless
    onion or onion flakes
    4 servings brown rice
    1 cup salsa
    1 cup shredded cheddar
    3 tbsp sour cream
    taco seasoning
    water

Directions

Cut chicken into bite-size pieces. Brown with onion. Add taco seasoning and 1/2 C. water, simmer until water is mostly gone. Add uncooked rice and 2 cups more water. Bring to a boil, then reduce heat. Simmer until rice is tender (refer to directions on package of rice for time). Add salsa, simmer until warmed. Sprinkle cheese over rice / chicken mix. Cover just long enough to let cheese melt. Serve with small amount of sour cream (optional).

    Incredible!
    This was super yummy and is going to be a regular on my menu planning. I also added a can of corn! YUM-O! This week I am out of corn but am going to try black beans! =0) Should do great! Add a salad and you are good to go! Thanks! - 7/7/08

    I substitued pork loin chops for the chicken, and added more rice. My husband really liked it...I thought it was O.K. - 3/19/07
