Ingredients

    1 lb 93% lean ground beef
    1 package (abt 9 oz) original Fritos
    1 med can enchilada sauce
    1 can kidney beans, drained
    2 cups shredded cheddar cheese

Directions

Brown ground beef, drain.

Add enchilada sauce and kidney beans and simmer on medium heat 5 to 10 minutes. (the longer it simmers, the more it reduces and the thicker the sauce.)

Layer about 3/4 of the package of Fritos in a deep casserole dish. Next layer all of the beef mixture. Sprinkle with about 1 1/2 cups cheese. Add remaining Fritos (I usually use just under the full bag.) and sprinkle with remaining cheese.

Bake, covered, until cheese is melted and bubbly.

Makes approximately 8 servings.

    I tried this on my family...it was a success! Although the next time Imake it I think I wil ladd few veggies...olives, onions... - 5/7/09

    Why didn't I think of adding veg? lol... I guess I'm just used to how my mom made it. Mushrooms and corn sound good to me, too. :) Thanks! :) I usually chop a big onion and cook it with the ground beef. I love onions!

    THE CALORIE COUNT ON THIS IS NOT CORRECT!!!!
    Was the meal good? Yes it was, but for a meal that turned out to be almost 4 times more calories than stated it is very ubsetting. I am trying so hard to lose weight only to find this recipe and now be over my calories. from now on I will calculate 1st

    I've gone back through and the recipe calculator had the wrong information on the fritos, but when I corrected it, it only raised the calorie count by 30 and the fat by 2g. So, unless you used regular beef instead of 93% lean I don't see where you find 4 times more calories. Please let me know...
