Ingredients

    2 lbs Chicken Tenders, or Tenderloins. (check to make sure, its .5 g fat per serving.

    2 Bags of Success Whole Grain Rice

    2 Cans of Cream of Chicken Soup (98% Fat Free)

    2 Cups of Chicken Broth (100% fat free kind)

Directions

In a 13 x 9 inch pan, spread both bags of rice evenly on the bottom. Then take the 2 lbs of chicken tenders, and lay on top of rice. There will be alot of chicken that will take the entire spread of the pan. Mix the 2 cans of cream of chicken soup, and the 2 cups of broth together, and then pour over chicken and rice. Cover pan with tin foil, leaving one corner open to vent, and bake 75-90 minutes at 375 degrees. Make sure to check every 20-30 minutes to mix broth, and rotate chicken. Chicken on the outside of the pan will cook faster, so move those pieces to the middle while moving the ones not quite done to the outside of pan for an overall balance of chicken getting done at the same time. Casserole should take 90 minutes to cook completely, but ovens will vary.

This recipe will make 8 heaping servings of wonderful protein and complex carbs!
