Introduction

This is a low fat version of a family favorite that I tried out on them tonight and they couldn't tell the difference! Add some brown rice and a bag of mixed frozed vegetables for your side dishes and it's a great family meal. Ingredients

    4 boneless, skinless chicken breasts
    1 can Campbell's Healthy Request Cream of Celery Soup
    1 can Campbell's Cream of Chicken Soup, 98% fat free
    1 cup fat free sour cream
    1/2 cup slivered almonds
    1 sleeve crushed Ritz Crackers, Reduced Fat
    3 tblsp poppy seed
    3 tblsp Take Control Light Spread

Directions

I usually boil the chicken ahead of time and cool, then tear apart or cut into chunks.

Stir the 2 soups, sour cream and slivered almonds together in a medium bowl. Add the chicken and stir together. Place in 2 qt casserole dish.

Melt the butter substitue ( I used Take Control Light Spread) and stir in the crushed Ritz crackers and poppy seed, then sprinkle over the mixture in the dish.

Bake at 350 for about half an hour.

Makes about 8 3/4-cup servings.
