Introduction

Breakfast cookie with all the goodies of trail mix- to go! Breakfast cookie with all the goodies of trail mix- to go!
Number of Servings: 32

Ingredients

    (Ingredients match nutriton calculations)

    1 c Crisco/Shortening
    1 c Splenda
    2 TBS Honey
    1 c Apple Sauce (unsweeened)
    1 Egg
    2 Egg Whites
    1 tsp Vanilla
    2 c Wheat Four
    1 tsp Baking Soda
    2 tsp Cinnamon
    3 c Granola Cereal (w/fruit)
    1 c Raisins
    1/2 tsp Salt (Optional)
    1 c Instant Oats (dry)



Directions

Mix crisco, splenda, and honey in mixer.
(1c Splenda plus 2 Tbs Honey = 1c brown sugar!)

Add applesauce, eggs, and vanilla and mix.

In seperate bowl, mix remainig ingredients.

Bake for 13-18 minutes at 350*
(Makes 32 large breakfast cookies!)

Try adding a cut up bananna, craisins, dried apples and any other trail mix type things laying around. I also add 1/4 c fiber powder to mine. (none of these in nutrient info)

    This looks good, I will give it a try with stevia for splenda and some nut butter... and maybe pieces of apple instead of raisins. Thank you for sharing! - 3/20/09
