Introduction
I love chocolate cake. And when I needed a chocolate fix quick and couldn't find a cake mix, well I found this recipe (at the back of hershey's cocoa) Delicious and moist and chocolatey! The recipe calls for 2 cups of sugar, I used 1 1/4 and thought it was just the right amount of sweetness. Next time I'm subbing applesauce for oil. I love chocolate cake. Ingredients

1 3/4 c flour
3/4 c unsweetened cocoa
1 1/4 c sugar
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 tsp salt
2 large eggs
1 c. nonfat milk
1/2 c canola oil
2 tsp vanilla extract ( I used mexican vanilla)
1 c of boiling water
Directions
****batter will be very runny, don't worry, that's how it supposed to be!
1. Preheat oven to 350, grease and flour 3 - 8 inch round pans (you can use 2 - 9in, or 1- 9x13, or do cupcakes up to you! just change your time in the oven)
2. In large bowl stir dry ingredients.
3. Add the eggs, milk, vanilla, and oil mix for 2 minutes on medium speed.
4. Stir in the boiling water. ( I like adding instant coffee to my boiling water, it will not make the cake taste like coffee, it will intensify the chocolate flavor).
5. Pour into pans and bake for approx. 22 mins or until toothpick inserted in the middle comes out clean. (increase or decrease time depending on your pan size)
6. cool for about 5 mins in pans and turn onto cooling rack.
7. Cover with your favorite chocolate frosting for a chocolate lover's cake, or whipped frostings!
