Ingredients

    1 package corn tortillas (12)
    1 can black beans
    1 tomato chopped
    1/2 green pepper chopped
    1/2 onion chopped finely
    1/2 c. black or green olives
    1 c. salsa
    jalepeno peppers (optional)
    1/2 tsp. cumin
    1/2 tsp. chili powder
    1 tsp. garlic powder
    1 1/2 c. grated light cheese

Directions

makes 8 1 cup servings.

layer corn tortillas by ripping in bite sized pieces on the bottom of a 13 inch casserole dish.
Next place the beans on top in a layer and then layer the vegetables, olives and mix the spices into the salsa before spooning over the entire casserole.
Cook in a 350 oven for 30 minutes. Remove and add cheese. Cook until melted and bubbly-about 10 minutes.

Serve with low fat sour cream, chopped cilantro and salsa.

Also good with a large green salad on the side.
