Introduction
THIS IS NOT A LOW-FAT OR LOW-CALORIE FOOD!!! I only entered this recipe so I could figure out what the calorie damage is. That said, if you want to indulge, it is a wonderful Cajun dish and one of my favorite comfort foods.Please don't rate the recipe unless you try it. Ingredients

1/4 lb Butter
4 cups Chopped Onions
2 cups Chopped Green Peppers
1-1/2 tsp Fresh Chopped Garlic
4 cups Sliced Mushrooms (substitute Chopped Celery if you hate Mushrooms)
1-1/2 tsp Flour
Salt & Pepper to taste
1 tablespoon Cayenne Pepper
4 dashes Tabasco
1 tablespoon Garlic Powder
2 cups Light Whipping Cream
1 cup Half n' Half
1-3/4 cup Tomato Sauce
* Seafood (8 oz, not included in calories listed above) is optional -- Crawfish is best!!!
Directions
Melt butter in large heavy duty pot. Add onions, peppers, garlic and cayenne pepper. Sautee, stirring occasionally until onions are translucent (15 minutes). Add mushrooms (or celery) and sauté for 5 minutes. Add flour and mix thoroughly for 1 minute stirring often. Add whipping cream and half n' half. Cook until cream thickens, but not boiling, and stir often. Add tomato sauce and cook for 15 minutes. Salt and pepper to taste. IF DESIRED, add seafood or crawfish. Stirring often, cook until meat and/or vegetables are done. The longer you let the sauce cook, the more flavorful it becomes. Serve over white or brown rice. Makes about 12 one cup servings.
