Ingredients

    18 ounces chicken breast, sliced into 6 thin slices
    5 tbsp olive oil
    1/4 cup rinsed capers
    4 tbsp Smart Balance Light Buttery Spread
    Wheat flour for dredging (calorie count includes 1/4 cup of the flour)
    1 cup chopped onion
    1/4 cup fresh parsley
    1/2 cup low sodium chicken broth
    Juice of 2 lemons
    1 tbsp minced garlic

Directions

Cut breasts into 6 thin slices . Dredge into the wheat flour. Heat up 2 tbsp of the Smart Balance and 3 tbsp of the olive oil. Cook each breast for 3 minutes, flip and cook for another 2 minutes. Remove chicken to a baking dish (keep warm in oven). Add rest of olive oil to pan. Add onions and saute for a couple minutes. Add garlic and capers and cook for 2 minutes. Add broth, lemon juice and rest of the Smart Balance. Bring chicken back into the pan. Let simmer for 5 minutes. Plate chicken with sauce spooned over. Sprinkle parsley over.
