Introduction

Pork tenderloin makes prep easy and keeps dish lower in fat. Fresh red pepper and snow peas make it colorful and whole wheat pasta adds fiber. Ingredients

    1 lb. pork tenderloin cut into 1" pieces
    1/4 cup lite soy sauce
    3 cloves of garlic, chopped
    1 tsp fresh ginger, grated
    1/4 tsp dried red pepper
    2 cups fresh snow peas
    1 medium red bell pepper
    1 cup sliced fresh mushrooms
    3 cups cooked whole wheat spaghetti (6 oz)
    1/3 cup fat free chicken broth
    2 tsp sesame oil

Directions

Combine soy sauce, garlic, ginger and red pepper in a ziploc bag. Add cut up pork. Marinate in refrigerator for 20 minutes, turning several times.

While meat marinates, cut up pepper and mushrooms, cut snow peas in half.

Cook spaghetti according to package directions then drain.

Stir fry pork along with the marinade. Add vegetables when pork is cooked through. Continue cooking for about 2 -3 minutes more. Add the cooked spaghetti and chicken broth, mixing well. Add sesame oil just before serving.

Makes 6 servings, about 1 1/2 cups each. If desired, sprinkle a few peanuts or cashews over top (not included in calorie calculation).
