Introduction

These are a very easy variation on a mini quiche. I add ham to mine, but feel free to leave it out to make it a good vegetarian option. These are a very easy variation on a mini quiche. I add ham to mine, but feel free to leave it out to make it a good vegetarian option.

Ingredients

    2 whole eggs
    5 egg whites
    1 cup low-fat cottage cheese
    1 clove garlic, chopped
    1/2 cup diced onions
    1 spring onion, chopped
    3 slices of low-fat ham, diced (optional)

Directions

Pre-heat the oven to 400 degrees.
Sautee the garlic, onions and ham.
Mix together with the eggs and cottage cheese. Pour into 8 non-stick muffin tins and bake for 20-25 minutes.

Makes 8 servings.
