Introduction

This is a Family Favorite that I altered to make it a healthier. This is a Family Favorite that I altered to make it a healthier.
Number of Servings: 12

Ingredients

    1c of chopped onions and celery
    1/2 c sliced carrots
    4 oz. of smoked salmon (or leftover salmon)
    3 cans of diced potatoes
    2.5 c of frozen corn
    2 cups of Fat Free evaporated milk
    5 cups of Skim milk
    1 c of instant potatoes (for thickening)

Directions

Over medium heat, sautee' onions and celery in a soup pot sprayed with cooking spray. Add your carrots, crumbled up salmon, potatoes and corn. Now gradually add your evaporated milk. Simmer for about 5 min. The mixture should start thickening. Mix in your milk. Stir til well blended. Now GRADUALLY add instant potatoes until you reach the desired thickness. Simmer til ready to serve. Makes 12 - 1 cup servings.
