Ingredients

    1 Pre-made pack of coleslaw mix (Fresh Express), 1/2 green pepper minced, 1/2 yellow onion minced, 1/2 apple chopped with skin, 1 clove garlic minced, 1 TB fresh cilantro, 4 individual packets Splenda, 1 TB freshly ground pepper, salt to taste, 1/2 TB. celery seeds, 1 1/2 TB cider vinegar, 3/4 cup plain lowfat yogurt, 1 TB lite soy sauce. 1/2 cup roasted unsalted peanuts.

Directions

Mince pepper, onion, and apple. Add to cabbage/slaw mix. Mince garlic, chop cilantro, add to yogurt. Add cider, Splenda, pepper, salt , celery seeds, and soy sauce to yogurt. Mix well. Add mixture to cabbage mix and stir well. Fold in peanuts and let sit to absorb flavors for about an hour, stirring occasionally. (The 60 minutes

    I made a modified version -- no apple, but carrots, and almonds instead of peanuts -- and it turned out pretty well! Using yogurt keeps it lite and yet it's still a tasty way to get lots of veggies in one dish. - 8/11/07

    Healthy cole slaw with a hint of zesty flavor from the yogurt and vinegar! My father loved it and he usually doesn't like "healthy" foods! I just didn't tell him! I didn't use the apples (allergic) or peanuts (just forgot) but it was good anyway! - 8/1/07
