These are the healthier version of the soft taco kits you can buy at the grocery store. They are quick and easy and taste good too! Made with lean ground beef. Ingredients

1 lb. COOKED ground beef
1 taco seasoning packet
6 whole wheat tortillas
1 cup shredded red leaf lettuce
1 cup diced tomatoes
1/2 cup shredded cheese
Directions
Make the taco meat according to the directions on the taco seasoning packet. Make each taco with the following measurements:
On one whole wheat tortilla, spoon approximately:
1-1.5 tablespoons taco meat
1 tablespoons shredded lettuce
1 tablespoon tomatoes
1/2 tablespoon shredded cheese
NOTE: The recipe calls for 1 lb of COOKED ground beef. If you want to save a little money, buy the cheap stuff, cook it, then rinse it off under hot running water. VOILA! Lean ground beef.
