Introduction

Here's a colorful, crunchy tuna salad that is great as a sandwich, or served on a bed of greens. I like to eat mine wrapped in romaine lettuce leaves, or on top of toasted corn tortillas with a dash of parmesan cheese. Filling, protein-rich, and frugal! Ingredients

    3 oz tuna in water, drained
    1/2 large red bell pepper, chopped
    1 tbsp Mayonnaise
    1 tbsp Dijon mustard
    2 tsp capers or chopped pickles
    salt and pepper to taste

Directions

Mix all ingredients together, and add salt and pepper to taste. Serve over mixed greens, or as an open-faced sandwich on corn tortillas (not included in calorie count).
