Ingredients

3 Tbsp olive oil
1/2 lb mushrooms, sliced
1/4 onion, chopped
1/3 cup white wine or white wine vinegar
1 1/2 pounds mild white fish fillets (orange roughy, flounder, or cod)
2 Tbsp chopped fresh tarragon or 1 tsp dried
dash salt
1/4 tsp paprika
Directions
Preheat the oven to 350 degrees. Coat a 13"x9" baking dish with cooking spray.
Warm the oil in a large skillet over medium heat. Add the mushrooms and onion, and cook until the mushrooms begin to release their liquid, about 5 minutes. Add the wine or vinegar and cook until the mushrooms are tender, about 5 minutes more.
Place the fish in the prepared baking dish. Stir the tarragon into the mushrooms and spread the mixture over the fish. Sprinkle with the salt and paprika. Bake until the fish just flakes easily when tested with a fork, 15 to 20 minutes.
