Ingredients

    2 cups sliced Zucchini (1 large or 2 small)
    2 cups whole tomatoes--no salt (roughly chopped)
    I large yellow or sweet onion chopped
    2 cloves garlic-minced
    1 tbsp oliveoil
    1 tbsp basil
    1 tbsp oregano
    1/2 tsp salt
    1/2 tsp black pepper

Directions

Heat Olive Oil in large skillet. Add minced garlic and saute over medium heat for 2-3 minutes. Add Onion and saute for 2 minutes more. Add Zucchini and tomatoes, basil, oregano, salt and pepper and cook until zucchini is tender. Serves 4
