Italian seasonings and vegetables make a great breakfeast dish. Italian seasonings and vegetables make a great breakfeast dish.
Number of Servings: 3


    1 slices thick cut bacon, diced
    3 slices fresh mushrooms, diced
    2 Tbs chopped onions
    1 Tbs chopped green pepper
    3 XL eggs
    2 chopped cherry tomatos
    1/2 Tbs chopped parsley
    1/4 tsp dried oregano
    1/8 tsp dried basil
    dash of ground bay leaf
    2 Tbs Sargento Italian garlic cheese
    pepper and salt to taste


Fry chopped bacon on Med-low heat until about half done. Add onions, mushrooms, green pepper, oregano, basil, and bay leaf. saute until tender. Scatter the chopped tomato over the top, then add the eggs and cover. Pepper and salt to taste. Cook until the eggs are to your liking. Add cheese let melt and serve. Great with italian bread toasted.
