Fast & easy meal with an enticing tropical flavor, thanks to the pineapple. Can be prepared and marinated the evening before, then broiled or grilled the next day. Ingredients

    Two large boneless, skinless chicken breasts.
    1 can pineapple chunks, in juice (not syrup) with 1/2 cup pineapple juice.
    2 cups cubed green or red peppers.
    1/4 cup sliced scallions
    1/5 cup sliced carrots
    1 cup green beans or snap peas
    4 slices cooked bacon; crumbled for top garnish.
    1 cup Lawry's Hawaiian Marinade

Directions

Spray a large rectangular baking pan or cookie sheet with Pam. Cube two large skinless, boneless chicken breasts. In a large tupperware, add chicken, cubed green peppers, sliced scallions & carrots. Add green beans. Add 1 can pineapple chunks with 1/2 cup pineapple juice from the can. Add 1 cup Lawry's marinade and toss to coat. Let sit 30 minutes (or overnight).
Skewer and grill for kabobs OR Broil indoors on low for 20 minutes, turning midway. Watch carefully - Lower rack if darkening. Serve hot over rice with crumbled, cooked bacon on top.
