Ingredients

    8 oz Chicken breast no skin
    100g fresh broccoli
    100g snowpeas
    200g zucchini
    2 oz uncooked basmati rice
    2/3 tin reduced fat coconut milk
    1 tablespoon green curry paste

Directions

Makes 2 servings

Pour coconut milk into wide pan
Add curry paste and bring to simmer
cut chicken into bite size pieces
Poach for 10mins in coconut milk, turning once
Add sliced courgettes and simmer for a further 5mins
Add small broccoli florets and snow peas and simmer for a further 5 mins
Serve with cooked rice
