Introduction

This is an alternative to spaghetti that is filled with veggies. This is an alternative to spaghetti that is filled with veggies.

Ingredients

    2 Tbs Olive oil
    1/2 onion chopped
    2 Tbs minced garlic
    1 red pepper, chopped
    2 green peppers, chopped
    16 ounces sliced mushrooms
    1 zucchini sliced and cut into quarters
    5 breaded chicken patties, cooked, sliced
    4 cans Italian seasoned tomatoes

    Serve over fettuccine (calories not included)

Directions

Makes 12 1 cup servings

Heat oil and saute veggies until tender. Add tomatoes and chicken patties. Serve over fettuccine.

    This was very good and we loved all the vegetables! It was just a small serving size with the pasta included ... I wanted much more. So I'm looking forward to lunches of leftovers. :) - 4/16/09

    You don't have to- it would change the nutritional info for sure (for the better) if you used grilled chicken instead (which is what I would do).

    Very Good
    I cut the recipe in half and used 15 chicken nuggets halved. One cup is a nice size portion if you serve it on a cup of pasta. We enjoyed this, but I will add more Italian seasoning next time for a bit more flavor. Yes, all the garlic is needed. - 9/25/10
