Ingredients

2 large eggs
3 slices bacon
1 oz. cheddar cheese
1 low carb tortilla (5 net carbs)
1 half diced jalapeno, raw
1 minced clove garlic
.25 cup diced onion
.25 cup diced peppers (red, orange, yellow or mix them up)
.25 cup sliced mushrooms
1 tablespoon picante sauce
cilantro to taste
Directions
Cook bacon over medium high heat until almost crispy.
Drain oil from pan, keeping the bacon bits in the bottom of the pan.
Add garlic, onion, jalapeno and peppers to pan. Add salt & pepper to taste.
I like to cook the vegetables over medium high heat until the garlic turns brown about 2 to 3 minutes.
Add mushrooms and turn heat down to medium.
Scramble the eggs in a bowl and add to vegetables, stiring until blended.
When the bottom firms up try flipping the whole thing and add cheese on top.
Cover and turn the heat off.
If you have a gas stove you can cook the tortilla 10-15 seconds on each side, if not cook in the oven for 1-2 minutes or microwave 10-15 seconds.
Fill tortilla with egg mixture and bacon.
Add cilantro and picante sauce to taste.
