Introduction
This is SO easy, SOOO yummy and SO healthy!I got this recipe from a friend before I even started eating healthy and used to eat a couple of servings as a meal.
It's a great way to get in those veggies!

Ingredients

1 Medium Summer Squash (the yellow ones with the crooked necks)
2 Slices of Bacon
2 TBS Parm Cheese
Garlic, pepper, or seasonings of your choice to taste
Directions
This is for 2 servings but can, of course, be very easily altered to make more.
Wash & cut ends off of squash and slice in half.
Sprinkle open part of squash with garlic and pepper (or any seasonings you like-Italian is good too)
Place a piece of (raw) bacon over top of inside of each half
sprinkle 1 TBS over top of each piece of bacon
Cook (bacon side up) in oven at 350 for 20-30 minutes.
The cook time will vary based on size of squash so just check it about every 10 minutes to see if the center is tender.
The juices from the bacon will make it very moist.
I also recommend trying cheddar or feta on top instead. A little higher in calories but delicious!
Each whole squash makes two servings.
