Introduction

Adapted from the "Fix It and Forget It Cookbook" for your slow cooker, but much better, I think. Perfect after a long day at work with some crusty bread and a side salad. Number of Servings: 8

Ingredients

    1/2 cup chopped onion (about half an onion)
    1 tbsp. olive oil
    1 pound fresh or frozen cod, haddock, or other mild white fish
    1 bag seafood medley, i.e. Trader Joe's frozen blend of shrimp, scallops and calamari
    4 cup diced potatoes
    15-oz can or 16-oz frozen package creamed corn
    32-oz box veggie broth
    1 pint half and half (or 1 cup each half and half and skim milk)
    salt and pepper to taste

Directions

Sautee onion in olive oil until it just starts to brown.

Add onion, fish, potatoes, corn and broth to your slow cooker. Set on low and cook all day long, at least six hours.

About an hour before serving, stir in the half and half and chunk up the fish. When ready to eat, season to taste with salt and pepper.

Makes about 8 servings, depending on your appetite.

    Very good, I cheat a bit by using one cup of frozen mixed vegetables instead of the corn and all skim milk because I am fat and three tbs of corn starch to thicken.
    What is your serving size? Like most people I use the recipe as basis then wing it.
