Ingredients

    2 cups thinly sliced onions, separated into rings
    2 Tbsp light margarine
    2 Tbsp flour
    2 cups water
    2 cups cubed peeled potatoes (about 1/2 lb)
    1 cup sliced celery, or 1/2 tsp celery seed
    1 tsp salt
    1/4 tsp pepper
    8 oz shredded cheddar cheese (2% milkfat)
    1 lb cod fillets
    1 can (4 oz) tiny shrimp
    2 cups skim milk

Directions

Cook onions in margarine in 3-qt saucepan on medium heat until tender, stirring frequently. Add flour; mix well. Gradually add water, stirring until well blended.
Add vegetables and seasonings; stir. Bring to boil. Reduce heat to medium-low; cover. Simmer 30 minutes or until potatoes are tender.
Stir in cheese; cook until melted, stirring frequently. Add cod, shrimp and milk; cook until heated through and fish is cooked, stirring occasionally.

Makes about 8 1-cup servings.

    Very good!! Light but with a lot of flavor. I used fresh shrimp instead of the canned and added a little fresh snapper as well as the cod. I will definitely make this one again. - 10/26/10

    My husband says this is "good" and would give it 5 stars! We don't have any other fish chowder recipes to compare it to. I had 2 pounds of cod that I didn't want to eat but knew i needed to cook. I'm glad i found this recipe! I tried to double the recipe w/ half the cheese. Great! Yum! :) - 3/29/10

    This turned out awesome. I didn't have all the ingredients on hand but I made do. My father loved it too. He said excellent. I used one medium onion though and added some shredded carrot instead of celery. I also used small fresh shrimp instead of canned. Andd added some garlic to the onions. - 1/27/10

    My husband only liked fried fish till now! He love to catch fish but not eat it. This is the best chowder I have made and my husband like it. - 12/31/09

    This turned out really good. I added scallops instead of shrimp, since I had some of those in the freezer, and a little corn. I didn't add any salt at all. The house smells so good now! - 3/30/09
