Introduction

Number of Servings: 8

Ingredients

    California Blend vegetables - 10 oz pkg
    Velveeta cheese 1/2 fat - 1.5 cups diced
    Margarine, low fat - 1/4 cup
    Ritz crackers, low fat, - 1 tube, crushed.

Directions

Preheat oven to 350 degrees. With olive oil, grease an 8x10 baking pan. Place vegetables in sauce pan and heat through. You may steam the vegetables in a steamer to prep the vegetables. Dice the Velveeta cheese. Crush crackers. Melt margarine. Pour melted margarine over crushed crackers and mix to moisten the crumbs.
Once vegetables are cooked/steamed, place in baking dish. Add the Velveeta cheese evenly. Place moistened cracker crumbs over the top. Place in oven at 350 degrees for 35-45 minutes.

    This recipe is awesome. I used Ragu Cheese in a jar instead of the velveeta. I also added cut up chicken breast to make it a complete meal. - 2/25/10
