Ingredients

    Onions, 1 large diced
    Celery, 2 stalks diced
    Carrots, 2 carrot diced
    Bell Peppers, 1 large diced
    Mushrooms, 1 cup sliced
    Garlic, 2 cloves minced
    Soy/Veggie Burger crumbles 2 cups
    Sweet Corn, Frozen, 1.5 cup kernels
    Chunky Salsa, .5 cup
    Condensed Cheddar Cheese soup, 2 cans
    Chili powder, 1 -2 tsp
    Pepper, black, .25 tsp
    Frozen potato nuggets 4.5 cups
    Taco-style shredded cheese, .5 cup,

Directions

Heat oven to 375. Oil Spray a large skillet. Add onions, celery, carrots, and garlic to skillet. Spray vegetables with oil spray. Cook vegetables over medium heat for 5 minutes. Add in mushrooms and bell peppers. Continue cooking until almost crisp-tender, about another 3 minutes. Stir in frozen corn to heat thru. Stir in crumbles breaking up as needed. Stir in soup, salsa, chili powder, and pepper. Spoon mixture into ungreased 3 quart casserole dish. Top with frozen potato nuggets. Bake uncovered 40 minutes. Sprinkle with cheese. Bake 5-10 minutes longer or until bubbly and cheese is melted.

Note: Next time will try one can of the chese soup and 1 to 1-1/2 cups salsa.
